The electronic expansion valve regulates the amount of refrigerant employed every 200 milliseconds thereby accelerating the chilling time and ensuring the precise, efficient control over refrigeration. Nuovair blast chillers stand out for their robust construction, featuring panels up to 100 mm thick containing high-density polyurethane foam and AISI 304 stainless steel used both inside and out. This results in advanced insulation which reduces heat dispersion and improves energy efficiency by up to 20%.

The quiet, almost silent bionic blades, conceived from advanced industrial applications, are approximately one quarter larger than the industry standard. They guarantee air flow up to 100% greater, equal to 12,000 m³/h each. By regulating the speed automatically, on the basis of the temperature in the chamber, air circulation and the overall efficiency of the system are optimised.

The XL evaporators, with their large surface area, combined with superior air circulation, ensure the cold is distributed uniformly throughout the chamber. Rapid, uniform refrigeration prevents the formation of macro-crystals thereby preserving the structure, moisture, and quality of the food products.

Door frames in 100% stainless steel

We are the only manufacturer of blast chillers to make door frames entirely in AISI 304 stainless steel. This bold design choice was made to improve the door’s ability to withstand knocks and corrosion, to improve hygiene standards, and to extend the working life of the machine, even in particularly intense working environments.

The brain of the machine

The Nuovair system is controlled by a 32-bit industrial PLC (Programmable Logic Controller). It is designed to operate continuously and under any conditions. It guarantees processing speed, stability, and protection from power surges, coordinating the action of each component to achieve maximum performance in every blast chilling cycle.

Intuitive technology for tailor-made cold

Managing Nuovair power is simple, just like a daily routine. Thanks to the industrial touch-screen display, you have access to over 70 pre-set chilling cycles: just select the product icon and the machine will automatically set the best parameters for that type of food, such as the air speed, the temperature, and the duration. Each program can be modified and customised on the basis of your specific needs, or you can create programs from scratch to build your completely customised work system.

All the thermal phases in just one machine

Thanks to the hot cycles, Nuovair blast chillers become multifunctional systems. They simplify the work in the kitchen or workspace and avoid the need to purchase other equipment.

 

The thermal modulation system, managed by specific software and solid state relays, regulates the heat in a gradual, progressive way for leavening, fermentation, defrosting, and cooking. The result is a stable temperature, without fluctuations, and repeatable processes, less energy consumed, and constant results, batch after batch.
